Ask owner Cecilia Diaz Chuit to suggest a tranquil place to grab some lunch and she will arrange a packed picnic of Serrano ham and arugula sandwiches on homemade whole grain bread and suggest you set off to explore the property’s private vineyard on mountain bike, where any secluded spot you choose will afford jaw-dropping views of the snow-capped Andes Mountains. Sound like too much work? Alternatively she will arrange a spread of charcuterie and cheeses on your very own private rooftop patio, where, from the comfort of a day bed, you can spend the whole day admiring the view and doing nothing at all.

Cavas Wine Lodge sits right in the middle of a 35-acre vineyard where 14 stand-alone vignettes and a main lodge recall the chic villas of the Mediterranean thanks to design elements like arched doorways, interior courtyards with gurgling fountains and stone walls painted in eggshell. A spa focuses on wine-therapy treatments such as a Malbec grape seed body wrap. Dinners are served by candlelight in the underground wine cellar where award winning Argentine labels are stored at perfect temperatures and paired with sophisticated dishes that merge traditional flavors with the freshest local ingredients. Guests at the lodge can borrow the aforementioned mountain bikes for self-guided outings or let the concierge organize private visits to both heavyweight wineries like Norton and boutique operations like El Lagar Carmelo Patti.

Mendoza, the world’s fourth largest wine-producing region, is known for its dry climate, mineral-rich water, sandy soil and 330 days of sunshine. In this Argentine province, you can sense the excitement growing faster than the vines as more and more premium local Malbecs, Cabernet Sauvignons and Syrahs win awards in international wine circles. Unabashedly open about their winemaking techniques, at many bodegas visitors are invited to taste wine straight from a barrel. Meanwhile, the city itself is noted for its wide, tree-lined avenues and fountain-filled parks plazas, rose gardens and ceramic-tiled sidewalks.

Just 20 minutes away from the lodge is the 1971 Carlos Thays-designed Club de Campo, an 18-hole golf course with unbeatable views of the snowy peaks. More adventurous guests can request a trekking or horseback riding excursion on the Andean foothills led by the region’s excellent guides. Luján de Cuyo (the first region to institute the AOC for Argentine Malbec) is 20 miles south of downtown Mendoza, Argentina.

Accommodations
Fourteen identical and spacious (nearly 1,000 square feet) adobe bungalows. Each features minimalist yet plush furnishings, claw-foot tubs and al fresco showers, outdoor terraces and private plunge pools that all but spill out into the surrounding vines.

Wines
Some of the most highly respected oenologists, including Napa’s Paul Hobbs, have labored within the adobe walls of the Mayan-inspired winery at Catena Zapata. Achaval Ferrer is a boutique winery committed to producing small quantities of fine red wine. Their 2002 Finca Altamira Malbec scored 94 points in the 2004 Wine Spectator weekly.

Dining
Chef Sebastián Flores specializes in South American dishes such as ribeye with chimichuri sauce and Andean potatoes. Meals take place by candlelight in the cellar, in the main house or in your private patio.

In the Neighborhood
In 2003 Carlos Pulenta, descendant of one of Argentina’s most prominent winemaking families, ventured out on his own to create a cutting-edge winery employing every technological advancement available to produce exceptional quality wines. The winery is also home to La Bourgogne, a world-class French restaurant. Nearby is Luigi Bosca, a winery that launched the first DOC Malbec in Argentina in 1991 and led the creation of the DOC in Luján de Cuyo.

THE RECIPE
Crepes with Dulce de Leche

Dulce de leche, a jam made of slow-cooked milk and sugar, is as much a part of the Argentine identity as gauchos and che (Che is the nickname of Argentina's revolutionary Che Guevara, as well as an expression that means "hey you." in Argentine slang). The most common daily breakfast for Argentine children is a piece of toast with butter and dulce de leche on top Cereals and mil are virtually unheard of. In our family, panquques de dulce de leche--dulce de leche crepes-- were a special treat that my mother made for us on Sundays and holidays. This recipe comes from Vanina Chimenco and Francis Mallmann at Restaurante 1884 in Mendoza

INGREDIENTS

Crepes
2 large eggs
1 1/2 cups all-purpose/ plain flour
2 cups whole milk
1/4 cup water
1/4 tsp salt
1 tsp granulated sugar
4 tbsp unsalted butter, melted
6 tsp unsalted butter for greasing pan

Dulce de Leche
4 cups whole milk
1 1/4 cups granulated sugar
1/2 vanilla bean/pod, split lengthwise
1/4 tsp baking soda
Confectioners'/icing sugar for dusting

For the crepes: In a blender, combine the eggs, flour, milk, water, salt, and sugar. Blend until smooth. With the machine running, gradually drizzle in the melted butter. Strain through a fine-mesh sieve into a bowl. Cover and refrigerate for at least 2 hours or overnight.

In an 8-in crepe pan or frying pan, melt 1/2 tsp of the butter over medium-high heat. POur about 3 tablespoons of batter into the center of the pan and tilt the pain until the batter covers the bottom of the pan. Cook for about 1 minute, then turn the crepe and cook for about 30 seconds on the second side. Transfer to a plate and repeat to make 12 crepes, stacking them as you go with sheets of parchement/baking paper between them.

For the dulce de leche: In a medium saucepan, bring the milk to a boil and add all the raminaing ingredients. Reduce the heat to slow and simmer, stirring frequently, until reduced to about 1 1/2 cups, 60 to 90 minutes. Strain into a clear jar and let cool to room temperature. To store, cover and refrigerate for up to 6 weeks.

Preheat the oven to 350F. To assemble the crepes: PLace 2 tbsp dulce de leche in the center of a crepe. Fold the crepe in half, then in half again to make a triangle shape. PLace on a baking sheet/ tray. Repeat to fill and fold the remaining crepes, placing them on the pan in a single layer. Heat in the over for just 2 or 3 minutes; any longer will dry out the crepes and cause the dulce de leche to run.

Place 2 crepes on each plate and dust with confectioners'/incing sugar. Serve at one.
