Like all good things, summer is coming to an end. But that doesn't mean the good times are over. In fact, there's still time for that last picnic in the park in so check out our new RSVP column.

THE RECIPE
Tropical Sensation Cookies

Candied fruit adds moistness to these cookies, giving them a unique texture not usually associated with sugar cookies. The fruits stay plump and chewy after baking. You can also use chopped dried fruit, which will come out a little firmer. Both cookies are equally delicious.

Ingredients
Sugar Cookie Base Dough
2 cups coarsely chopped candied papaya
2 cups coarsely chopped candied pineapple
1 cup shredded sweetened coconut
1/2 cup shredded unsweetened coconut

Preheat the oven to 350 degrees F.

Line two baking sheets with nonsticks silicone baking mats or parchment paper. (Alternatively, use nonstick baking sheets or lightly butter conventional baking sheets.) Set aside
Prepare the sugar cookie dough, adding the papaya, pineapple and sweetened coconut with the dry ingredients. While the dough is still streaky, remove the bowl from the mixer and scrape the paddle clean.
Lightly flour a clean, flat work surface.
Scrape the dough onto the floured surface. Lightly flour your hands and finish mixing the dough by using a gentle kneading motion, working until the dough is just blended. Do not overwork the dough, you want to be certain that all of the ingredients are just blended together
Place the unsweetened coconut on a large flate plate.
Using a tablespoon or small ice-cream scoop, make mounds of dough. Roll the dough into balls about 1.5 inches in diameter. Roll each cookie in the unsweetened coconut to coat completely and place, about 2 inches apart, on the prepared baking sheets. When all of the cookies are formed, place in the oven and bake for about 10 minutes, or until just barely brown around the edges.
Remove from the oven and, using a metal spatula, transfer the cookies to wire racks to cool.
Store, airtight, at room temperature for ut to a week.
